There are now loads of different on-demand products. The major benefit of on-demand software is that you do not need to have it installed anywhere, and this means you can access your work from anywhere, any computer, even in the coffee establishment using your own laptop, or even in an Internet cafe using some dog of a computer.
Mostly on-demand software is at this time working on replacing well known and well used products, such as Google's Docs and Spreadsheets, even Google Notebook is an on-demand software product.
What we need to see on-demand offerings doing in the future, though, is not just replacing what we have, but creating some really new applications, as noted by David Thompson at Genius.com. Sort of an obvious comment, but is painfully being ignored by the majority of software developers -- although we might see that a lot of what Google is working on is actually quite innovative -- but even then, we are still working on old themes.
What we need to see developed in the on-demand world is a real category buster! Marc Benioff's Salesforce.com is not it either. Let keep looking.
In the meantime, being a tech without wires worker, you need to make sure that any new software you use can be used in an on-demand manner. By using on-demand software you enable flexibility of operating, you might even find it possible to leave the notebook computer at home and use any available computer wherever you are in the day!
